I love French baguettes, don't you? But I always have at least half leftover, especially on weeknights, and let's face it, a day old baguette just doesn't taste the same. So instead of chowing down on the whole baguette and feeling guilty after, I stop myself (it is very hard to do, especially when there is butter) and make a semi-healthy snack: Croutons. You can tweak the recipe to your own taste and make it healthier by substituting butter for olive oil and omitting Parmesan cheese.
Ingredients:
leftover French Baguette
butter or olive oil
dried herbs, i prefer thyme or basil
optional garlic - smashed in skin
optional Parmesan cheese
cut up the baguette in 1/2 - 1 inch cubes
melt butter/oil with garlic and herbs on low heat until it stops boiling
toss the baguette cubes with the herbed butter/oil
spread the cubes on an ungreased baking sheet loosely
toast until light brown
cool and Crunch!
Now Whole Foods in my area sells half size baguettes but I like to buy whole ones, just to have homemade croutons :)
